A New Line of Rolex

Ah, the Ugandan Rolex. Desired by many day in and day out. The craving can be strong. And one whiff of the decadence can put one over the edge. And this Rolex has nothing but time. Until it’s gobbled up on the side of the street or in a market. Often sold from kiosks and street carts, this delicious wrap of sorts is simple and oh. so. good!

Mandazi Rolex and Samosas

The Famous Malayaka House Auntie Rolex

  • 2 eggs

  • pinch of salt

  • 1 Chipati

  • small handful shredded cabbage

  • 3-4 thin slices of tomato

  • cooking oil

Cooking Instructions:

  1. Break eggs into bowl, add pinch of salt, and beat with a fork.

  2. Pour the eggs onto good size fry pan over medium heat and cook though into an omelette, turning over once. It should be just smaller than the Chipati.

  3. When eggs are cooked through, lift them with a spoon and place the chapati underneath the eggs and warm together for 10-20 seconds.

  4. Top with cabbage and tomato.

  5. Season with salt to taste. For a more authentic flavour, be quite generous with the seasoning. Ugandans love salt!

  6. Roll like a burrito and enjoy!
