Mango Muffin Madness

Mmmmango! It’s mango season down under and my world is full of their juicy goodness. Enjoyed simply as they are, spiced up with chilies to make salsa for fish or as a sweet addition to muffins. No matter how they make it to my plate, I’m a little mango mad!

This Mango Muffin recipe is a bit of a friand recipe, but I just have muffin tins, so muffins it is! Sweeten up your morning with some mango!

Recipe
Makes 12 muffins

Ingredients:
125g almond meal
1.5 C icing sugar
.5 C self rising flour
6 egg whites
185g butter, melted
1 mango, diced

Method:
Preheat oven to 200 degrees C.
Grease one muffin tin.
Mix almond meal, icing sugar and self rising flour in a bowl.
In a separate bowl, whisk the egg whites until they are frothy.
Gently add egg whites, butter and mango to the dry ingredients, mixing until just combined.
Fill your greased muffin tin with the batter and bake for 25 minutes.
Once baked, remove from muffin tin and cool on a wire rack.
Enjoy the mango sweetness!
